Strawberry Vanilla Cake...Finding yourself


During the past 2 years my way of living has totally changed...down, deeply touching my roused roots 
Last summer in August I wrote my  first post...I created this blog because I was craving for expressing my feelings and triggering the innocence of my mature hands.


Every time when I place my warm body in front of the screen...my heart blooms and rises because all these writings are not just words...they are more over...motivation.

We as humans have been created as a masterpiece...a brick for life so not only do we maintain the life system but we also bring to life, give birth, share love...

I love being loved and I love to love someone.
Think about the world as a storybook...as something appealing, unique and ....a little bit scary because in every ''hair-raising'' plot exists the opportunity of being loved.
Try to find your own ''Golden mean'' in order to reach the balance  in your organism while the life around you is flowing quite unpredictable...




Years pass. 
 Every single day is one step closer to the emotional death...the forgiveness of ourselves...the stealing  of our childishly shining eyes...but why?!
Why do we allow our body/soul ages...why do we loose the endearing inspiration...the cheerful gestures...the bird's melody that sounds and vibrates deep into my mind.
WHY?

This post is about finding yourself during the years...through the taste of food.
Birthdays are those parts of the year that I characterised as a strange pray...
pray for health, happiness and LOVE.

I find myself as an experimentator and a beauty lover...mostly perfectionist but still a daughter of art.

My taste preferences for having the best birthday cake include good dark chocolate, fresh fruits, homemade jam, fresh and light cream...Ahaa plesure!




 Strawberry Vanilla Cake

Each morsel was an explosion of altered tastes and flavoring...the using of rye flour was gold, the freshness of the strawberries was delightful...the cream was so light but at the same time sprinkled with a satisfying novelty and innocence...













Ingredients:

Cake
225g coconut oil 
3/4 cup pure maple syrup
1/4 cup rice malt syrup
3/4 cup coconut sugar
1 tbs vanilla powder or extract
4 large eggs
2 1/2 cups stone ground sifted spelt flour
1/2 cup almond meal
2 tbs baking powder 
1 tsp salt
1 cup almond milk
2 1/2 cups strawberries, finely chopped

Frosting
750g mascarpone
1 1/2 thick natural yohurt
1 tsp vanilla powder or extract
3/4 cup chopped strawberries 

Strawberry Syrup(if using)
1 cup strawberries, whole with green tops removed
2 tsp pure maple syrup
1 tsp vanilla powder or extract

Instructions:
Cake
Cream the coconut oil with maple syrup and coconut sugar untiil smooth.
Add the vanilla and eggs and mix well.
Fold through the spelt flour, almond meal, salt, baking powder.
Gently mix through the almond milk until the mixture is smooth.
Fold the strawberries into the mixture.
Pour the mixture into the prepared baking tins and place in the oven for 40 min.
Once cooked set aside to cool completely.

Cream
Add the mascarpone into a large bowl and gently stir with a wooden.
Add the yogurt, maple and vanilla and stir until smooth.
Remove about 1/3 of the cream and place into a separate bowl.
Add the strawberries to the smaller amount of mascarpone and stir.

Syrup(if using)
Add a cup of strawberries to a small pot with maple syrup and vanilla. Bring to the boil and then reduce to a simmer for 10-15 min or until the mixture becomes a little like jam.
Once cool, blend into a smooth paste.
