This week is really busy so I had no time to post on Monday...but here I am.
As the summer has just came around our organism needs this type of fresh food that won't make it exhausted and confused....so let's consume more veggies whether cooked or row.
Be always sure that you have a bottle of water in your bag...may you put some lemon slices in it!
Summer is the season of adventures, new reached peaks and of course LOVE...a love that keeps us motivated and trigger.
It is important to be kept aroused because our life so short...and we are that smile that will choose whether to appear on our beautiful face or to sink deep in our ill heart. There are so many things that could happen without asking you How will you feel, or Will you be the same person who you are now...
We must carry on because we deserve it...we deserve our own life, we deserve our families...the sun, the moon that every night says ''Good night''...
Because of the hot weather I offer you to make this fancy dinner for your family, friend...or someone more closer to your heart!
Roasted Sweat potato with quinoa
Ingredients:
1 sweat potato
1 cup quinoa
200-300 g spinach
1-2 carrots
1 onion
2-3 cloves of garlic
1 small jar of tomato sauce
Instructions:
Preheat the oven to 200 Celcius...after some time put the potato in the oven for 45min- 1 hour.
During this time heat a saucepan. Once hot, add rinsed qunoa and toast for 3-5 min., or until all water is evaporated. Add water, a pinch of salt and bring to simmer
Meanwhile heat some olive oil and add the garlic and onion and cook until slightly softened. After 4 min. add the carrots and some water in order to get soft, after that add the tomato sauce, some salt, pepper and the spinach...of it seem dry add more water or tomatoes.
Once the potato is baked take it out of the oven and slice it in half.
I serve it with some of the stew on the bottom of the plate, sprinkle some sesame and you are ready to go!
