Today my sister and I read an article about the first vegetarian restaurant ''Hiltl'' located in Zurich (Switzerland)...1897!!!
It is absolute incredible that there has existed an actual place where people could try something different, full of taste and absolutely delicious. Their politic is to reach that diversity of taste that could combine as much alter tastes as there are in the whole aching world.

There are 50 representatives of 50 countries more over there are 2 who are nationally from Bulgaria, this is a GREAT honor. The main course of the restaurant is to find the right communication with the guests and to share and exchange one another their preferences. Nearly 120 years this big family has proved that the vegetarian and vegan lifestyle are personal choices that helps people to build their own potential and to be confidence with who they are.
I really want to pay attention on the respect that we have on the others and how valuable is to reconstructed that connection with the internal and untouchable us.
Since near a month I have been reading books in which has been flowing around the art of the tea industry followed by a soft and light biscuit...Mhm
This typical English evening made me dream about the fresh and colorful early autumn, the rain drops that dance together with the flows, the sun that burns our chicks for last time...
So these thoughts leaded me to the idea of baking some sweet treats that could be followed by a cup of warm and cozy tea. As my family is trying to cut out the gluten in our diet my sister and I started looking around for the the perfect gluten-free biscuit recipe.
If you are placing the bases of the gluten-free diet you should know that would need a diversity of flours:quinoa flour, rice flour, amaranth flour, corn flour, chickpea flour, millet flour...and there are many others which you could try. It is really interesting the combinations that could be reached and pleasing flavors that most of the flours have...so this is another part of the balanced eating which I am examining right now.
While baking these biscuits I was really interested in the texture that will turn out and of course the taste that will surly explode in my mouth...next to my heart. A couple hours later I was captured by the intoxicating aroma coming down stairs...perfectly baked, soft but still chewy Gluten-free Vegan Chocolate chip biscuits.
Gluten-free Chocolate chip biscuits
Ingredients:
8 TBSP (110 g) coconut oil
1/2 cup (100 g) light muscovado
1 tsp vanilla extract
1 chia egg
1 cup (140 g) brawn rice flour
1/2 cup (60 g) amaranth flour
1/4 cup (30 g) gluten-free starch
1/4 tsp baking soda
chocolate chunks
Instructures:
In a bowl combine the sugar and oil, vanilla and then add the egg.
In a small bawl, whisk together the flours, the starch and baking soda. After that add the dry ingredients into the oil mixture and mix until the dough comes together.
Add the the chocolate and scoop the dough onto a piece of parchment paper, roll the dough into a log and wrap it with the parchments and refrigerate for 1 hour.
Preheat the oven to 180C, cut the log into disks and place them on the baking sheets. Bake for 10 min. They might look a bit underdone but this is fine.
