I am officially IN the Summer Break so I am free to discover new peaks and to achieve my absolute GOLDEN MEAN.
Everyday I get up, do my warm water with lemon juice-really good for your digestion, balance the acidity of body and ensures the speed of your metabolism..., then I go up stairs and lie my Yoga map on the floor of the terrace and do my Yoga, feel the nature, breath the fresh early morning air! This is something that wakes me up and I feel that my eyes enjoy what they see...
After nearly 30 min. I go to the kitchen and make for me, my sister and my mother a cup of fresh juice or smoothie... My favorite at the moment is watermelon and melon-it is so refreshing and gives you so much energy!
I am not a huge fan of ice-cream...
Two days ago my sister and I started seeking for new recipes because I have to be prepared with post new if we travel somewhere. We go through all of our favorite bloggers and pointed out so many amazing summer recipes...
We come to agreement that as the Summer is here people are seeking for something refreshing and not so heavy, sweat but with less calories...well I don't think we have solved the problem with the amount of calories but who cares if the ingredients give you so MUCH,the taste is better then those which are in the market's freezers....
ICE-CREAM

The only problem is that at the moment I am not so keen on consuming a coconut and its out-products like coconut oil, milk...because of the smell...I don't know why but there is something in the smell that I don't prefer. Well all of the Homemade Vegan Ice-Cream's recipe included a full-fat coconut milk so I was forced to make it with a coconut milk...
The final result ,the taste of the coconut has gone...maybe because of the cacao, I don't know but I was so pleased with our Vegan Chocolate Ice-Cream...I loved it!
Vegan Chocolate Homemade Ice-Cream
Ingredients:
1/2 cup raw cashews
400 ml full-fat coconut milk
1 large ripe avocado
1 cup/250g pitted, packed soft dates
1/2 cup/55g raw cacao powder
You can add essential oils, salt, vanilla, diced fresh fruit, espresso powder toasted nuts
Instructions:
Place cashews in slightly salted water and let soak for 4-8 hours
Drain the cashews and rinse the water well. Add to a blender with the remaining ingredients and blend on high speed until as smooth as possible. Add water only if necessary - quite thick mixture.
Spoon mixture on popsicle molds or just in a square tray....You can decorate the ice-cream with melted chocolate, citrus zest, dried fruit, toasted nuts, cacao nibs, bee pollen...
