Apple cake / Ябълков кекс


Hello everyone...welcome to this cozy place where I share my seasonal life being! Yesterday my sis and I made this wonderful Vegan Apple Cake that officially underline the begging of the new season -Autumn!

I love that time of the year because it resembles a beautiful love story or those fairytales that my grandma used to narrow. The colours are the best part of the whole experience.  
I love that season because of its colours that are shinning and dancing along with the strong winds. The sky is like a capsule...embracing the whole world under its big and cozy hug. The rain drops are knocking on the window...are trying to communicate with the inner life , the soul, the piece. Every step that we made is followed a beautiful cup of tea, freshly baked cake or a melody put on a side. 
Last week I told you that this post is going on what kind of lifestyle has our grand grand parents used to follow. I really wanted to talk about the because during the years the food production has conquered the human's eye so that we eat way more unhealthy food. 



Think about the quality food, that real art made by the nature...all the fresh fruits and vegetables, natural grownups. You must have heard the term " seasonal food " ...so the massage that we can receive from it is a diet based on eating that type of growns which are spesific for each season. That means in  autumn our diet must be focused on beetroots, spanich, eggplants, zuchini, peppers, cauliflower, patatos, cabbage, leek...The best thing is to search what grows at your location...the easiest step is directly to go to a local farm and see what the farmer has collected as their own production. 
If we think about what used to be life 100 years ago we'll see that the way people eat was really important aspect of their life. They were listening to their bodies....how did the organism accept the outer space and of course the weather conditions. As an example we can take these situations : 4-6 times for a month in one year,here in Bulgaria, people took the diary products out from their daily diet...I definitely have to mention that the consumption of meat had been reduced and surely say that only those who had a farm animal allowed themselves to eat meat...but at all it may happened once in the winter months. 



Two weeks ago I had a meeting with my homeopathy - a wonderful person that I admire with each part of my soul. She has been walking along with me through my whole journey and made me feel alive...showed me the reason for being alive!
We talked about her grandpa who used to live with his family in the "Western Rodope".The family like all the other local people didn't eat meat and also included these dairy free months( detoxification)









Vegan Apple Cake
Ingredients:

140 g rice flour
45 g almond flour 
3 small apples 
3/4 cup of natural cane sugar 
1 TBSP cinnamon 
1 TBSP baking powder 
2 chia eggs
3/4 cup olive oil

Instructions:
Mix the dry ingredients. In another bowl combine the sugar with the olive oil. Then add the chia eggs and the shredded apple. Since  the mixture has turned out smooth add the dry ingredients. 
Mix carefully until it gets smooth and bake for 40 min in a preheated oven for 180C.

Chocolate Chia Pudding / Шоколадов крем с чиа семена



Welcome again to Food.Fashion.Lifestyle...Last week I missed uploading a new post because I was not ready to talk/write...I had that need for personal imperfection to close my eyes and help me calm down my existence!

Today I am going to talk about what is for me being a Vegan...the philosophy of following a plant-based diet. 
As I have written plenty of times this blog is created because of those who are trying to find  the three golden goodies - inspiration, beauty, love! My aim is to create easy but delicious recipes that could be done by everyone. Every new step that is made by you will change your life...every little difference that appear on your lifeline will make you closer to the person who you want to be...the healthy, full with energy and cheerfulness person. 

So lets begin with this week's topic that I represented several rows up...Vegan Diet.
This theme is one of the most discussed rubrics through out the social media. I am a person who loves the new things, all those mental innovations that change our daily routine. So my interest became bigger and started searching for extra information through books, videos and people who I know and are representatives of the medical spheres. My sis and I begin this adventure with trying vegan recipes, mostly sweets, then our interest got bigger and we changed our way of thinking because is important to be tolerant and take the massage given by all those living vegans out there. It is important to listen our organism and pay attention on it function...For me the best part of being a Vegan is that your imagination enlarges so that you build a new side of your personality - the way you think about the surrounding life.
But their is another part of this whole adventure that makes me feel uncomfortable. There are a lot of vegans and vegetarians out there whose aim is to  build a barrier between people only because they follow a different lifestyle....I am pretty confused because of this situation. For me personally the way you live is your own decision...the way you think is your own view over the surrounding existence.  It is exhausting how often a person is offended only because of their differences...only because he or she consumes meat or dairy products...of course for me eating meat is not the right decision but I am not the person who will insist on rejecting this type of food. My desire is to inspire people to eat more often clean and seasonal food...I also think that the geographical position of our country, the climate and the purity of the environment are the main factors that effects the local agriculture.

 We have to be proud that here in Bulgaria still exist local farmers with their private farms...we have to be proud that there are much more vegan and vegetarian products. We have to be proud that there are a lot of place where a Vegetarian or a Vegan can go and eat a real food without any criticisms...
So please be tolerant and don't discriminate someone only because of his different lifestyle...try to communicate without building this wall because at first people are live organisms and like every organism it needed to be grown with love!


Next time I will continue this topic...I want to talk about our roots and how did they live up to 80 years.


Chocolate Chia Pudding
Ingredients:
2 bananas
1 cup of  nut milk
4 TBSP chia seeds
1 TBSP cacao

Instuctions:
Mash the banana and add the other ingredients...stir the mixture until it gets smooth and let for at least 15 min.

Vegan Pesto/Виган босилково песто




It has been a while since I haven't posted anything...I am really sorry but for me is really important to share an information that has a special value next to the human being. So this two weeks I was thinking about myself, reasoning on who am I and is my body in a good health condition.
One of my personal requirements that builds a connection between the reality and my self conscious is the respect refreshing my future. Every time when I look around my eyes focus on faces...pale and tired faces that has been suffering from the missing of importance. And after a few years these exhausted faces will be covered by the weight of the years...and this hanker future will be destroyed...only because we have missed to be happy and proud of who we are.

So having in mind this situation we have to start appreciate what we take from the outer life...those little things that make us dreamers!

 So lets find this inspiration that dance along with our desires...that awake us every single day. It could be reading of a lovely story, drawing with your own colours or having a piece of chocolate! It doesn't matter. ...the important thing is to get out your passion.

I find my piece under the safety of food...I find myself happy when my body feels healthy. Having in mind this my personality improves itself and prevent the possibility of lost. As I have said plenty of times healthy eating is not just consuming of bio food and focusing yourself on a diet, it is the inner health...the mental health - how do you accept yourself surrounded by this overwhelmed life.
Try to ask yourself...to feel your heart and to reach the attitude that make you a wiser person.
Diets helps to see the outer level of the healthy lifestyle, the important fact is- Does your body feel the reality?
So be sure that during the years there will be the possibility to get rid off the unnecessary data and to start controlling your individuality!
Find the balance between the physical and mental health...there is the Golden Mean

Next time I will touch one of the most discussed diets at the moment - being a Vegan, so I really hope you will be interested.








Vegan pesto
Ingredients:
1 bunch of fresh Basil
1/3 cup pine nuts
1/3 cup nutritional yeast
2/3 cup olive oil
5 cloves garlic
salt and pepper

Instruction:
Toast the pine nuts.
Gradually mix the pine nuts, olive oil, garlic, nutritional yeast and basil in a food processor. Season with salt and pepper.

Fresh Summer Salad / Свежа лятна салата



Welcome everyone....
This week is dedicated to all fresh salads that can be made as a main or side dish...full of plenty fresh vegetables and healthy proteins. Fresh greens, sliced tomatoes,red onion, grilled zucchini and eggplant...some of the ingredients that are always on my table. You can add some salt, oregano, olive oil and lemon juice for extra flavor...how about a splash of proteins, maybe some quinoa, hummus or goat cheese, love this combination.

Everyday I get up, do my warm water with lemon juice-really good for your digestion, balance the acidity of body and ensures the speed of your metabolism..., then I go up stairs and lie my Yoga map on the floor of the terrace and do my Yoga, feel the nature, breath the fresh early morning air! This is something that wakes me up and I feel that my eyes enjoy what they see...

I don't know if I have ever mentioned that my biggest dream is to live in Italy...
I feel that I belong to this country, every time I listen to an Italian song, or just hear the Italian language my soul starts drawing on the surface of my heart lines, spots, words that resembles the Italian dream.
We all have our future, it is deeply hidden  in our eyes...stories that have been told during the generations!
We know that  the destiny is something that can't be changed but we still can avoid all the setbacks because of ourselves.

The Italian cuisine is an real Art...it is a piece of history that will be always felt by our thoughts.
  It is more than a food. It is a life, every recipe is a new story that has been described through all the different herbs and spices. It is a melody  that could be transformed in a different one but it will keep the passion...the professionalism of an artist.
The Italian cuisine is more than a pizza and a pasta  - it is wonderful Mediterranean masterpiece that embrace the whole Apennine Peninsula...Can we think about all those salads that can change your taste buds...

Roasted Sweat potato with Quinoa


This week is really busy so I had no time to post on Monday...but here I am.
As the summer has just came around our organism needs this type of fresh food that won't make it exhausted and confused....so let's consume more veggies whether cooked or row.
Be always sure that you have a bottle of water in your bag...may you put some lemon slices in it!

Summer is the season of adventures, new reached peaks and of course LOVE...a love that keeps us motivated and trigger.
It is important to be kept aroused because our life so short...and we are that smile that will choose whether to appear on our beautiful face or to sink deep in our ill heart. There are so many things that could happen without asking you How will you feel, or Will you  be the same person who you are now...
We must carry on because we deserve it...we deserve our own life, we deserve our families...the sun, the moon that every night says ''Good night''...

Oat Milk...Mhmm pleasure



Well...usually in the early morning when I have to do my go to breakfast (because here the school starts at 7 30 a.m) I open the fridge so my eyes start seeking for this liquid which changes the whole appearance and taste of one breakfast and not only...
And...Yes you are right...the nut milk, this pleasure  which transforms one boring smoothie into a masterpiece.

Since I was little I have been loving being in the kitchen...something more
I am still dying for that small space in which three pairs of hands are building...something
Maybe LOVE.

My heart blooms because  of all those little pleasures...the art which is figured by the sun ray and the rain drops enjoys its great power.

I was and I am still pleased with the idea of baking in the late evening when the sun sets, while the endless sky is coloring itself in a burning orange.
Traveling through all of the tastes which warm my heart is so important because the final result makes me feel...HAPPY

Mhmm...ChoColate Chip Cookies

I have been always reserved of making this famous american biscuits....
And I don't know why...maybe because of the great amount sugar which is always put in the fabric ones, maybe because this recipe is so commercial and on daily base...
But finally my sister made me choose this recipe and we sank in this unforgettable experience....
Through the baking time I was able to be seen being on the table, leaning over the products while trying to make some photos...if it is possible!
This recipe is perfect for taking some in your bag while traveling or just throughout the day because they have the consistency of scones and are not cracky. 
All the products are so easy to be found and are not pricey! 

Having in mind that these were my first cookingtime shots we (my sister and I) are fully satisfied and are planning making something more glamorous but also way more difficult...stay there for more

My family and I spent the national day, of ''Bulgaria's Liberation'' from the Ottoman empire, walking along the central streets of Sofia. Many beautiful places alighted on the corners of each paved street.
The sun was trying to break down the cloudy barrier...and at some point it succeeded.
The parks were full of the children's shiny faces...some of them were running while smashing the grass under their feet, other were riding bicycles...or screaming as much as they could and why not, they screamed because of the happiness which was stored in there hearts, the happiness which was depicting one splendid picturesque masterpiece.

Love, love, love...and more LOVE

Valentines day is just around the corner....
I am not one of those people who get so excited about the love which surprisingly gets so important on this day. The love is really inaccurate word...It has a lot of sights and different ways of interpretation... ''14th of February'' a special day based on hearts full of excitement and romantic thoughts. In my opinion we as an educated society have to express our love more often. It is not needed to be in presents or in special dinners, it may be just a smile every morning, just ''have a nice day'' or ''keep going''....in every situation in which we can make the person who is in front of us

Love is word which secures so many emotions and tales...tales which build ourself and change the children's childhood...inspire those who love to write love. 

Tale as old as time
True as it can be
Barely even friends
Then somebody bends
Unexpectedly

5 rows and enough words to share those feelings which we want to leave...to push away and only see the ashes
We open our eyes...our minds are directed straight to those little things we want to offer...our hands are searching for warmth and support. We inhale then exhale and our lungs absorb the oxygen needed for being alive. So many moments and at the same time enough  easy to become distraught.

Love is a drug, first you feel the pleasure then a  kind of confusion and the end...you just don't feel it.



I will stop this lyricism and say that I would like to share with you some not only so cute but also so delicious truffels which fill my heart with a tune of love and importance.

2 Different Breakfast Ideas...

Breakfast is my favourite part of the day....It is the beginning of a new tale.
In the mornings I am full of energy and my heart is usually able to do whatever it takes for reaching the unreachable. I love starting my new chapter of my life  with a glass of lemon water and full of vitamins and proteins food. I jump in all of  the different recipes which I have saved on my phone.....You may see me going down the stairs, crossing the living room and finally scrolling through all my recipes.
....As I said many times...living healthy lifestyle is not as easy as it sounds. Everything depends on your passion for living along with the surrounding nature and happiness. Yes....just a little smile can make us dreamers and can change our way of thinking!

So I decided to share with you some of my favourite breakfast ideas....healthy, free of rapidly degradable sugars and of course so delicious...

1.Banana, Almond & Chocolate cake


Ingredients:
200 g / 2 cups / 500 ml almond flour
25 g / 1/3 cup / 6 tbsp unsweetened cacao powder
1 tsp baking powder
sea salt 
2 eggs
2 bananas
1/3 cup / 80 ml cold pressed rapeseed oil or olive oil
1/2 cup / 120 ml maple syrup or honey

Preheat the oven to 180'C / 356'F
Add all the dry ingredients into a large mixing ball and set aside. Crack the eggs into e medium size mixing ball and beat for about a minute. Mash the bananas with a fork and add to the eggs together with oil and syrup. Beat until all is well combined. Add the wet ingredients to the dry ingredients and use a whisk to stir until everything is mixed. Grease a medium/small size baking tray with oil. Mix a little almond flour with cacao powder and coat the sides with the mixture to prevent from sticking. Bake for 45 minutes. 
Enjoy with some yogurt topped with a tsp of chia seeds and the best immunostimulant daneword thicket. 



2. Quinoa & Oat Bircher with Persimmons & Petals 



Ingredients:
1/2 cup uncooked quinoa and 1 cup water
1 cup rolled oats
2 cups yogurt
1/4 tsp ground vanilla

Place 1/2 cup  rinsed quinoa, 1 cup water and a pinch of salt in a medium-size saucepan. Bring to a boil, lower the heat immediately to a bare simmer and let gently cook for about  8 min. . The texture should be soft with a crunchy feeling then  set aside to cool.
Combined the cooked quinoa with oats and stir the yogurt, vanilla.
I serve my bawl topped with a 1 1/2 tbsp homemade tahanii crunchy for extra crunchiness....and a tsp of the same immunostimulant ''daneword thicket''....

Един ден сестра ми дойде при мен и ми се усмихна....знаеше че ще се зарадвам! Каза ми, че е открила нов блог.....знаеше че ще се зарадвам!



Връзката със света ме кара да се чувствам свободна и жива. Всеки път, четейки между редовете на нечий нов пост, аз се потапям в една нова история завладяваща същността ми и опияняваща сетивата. Пренасям погледа си от страница на страница и се удивлявам от възможността на цветовете и думите да се слеят в едно и да реализират велико творчество. Животът им е дълго пазена тайна, споделената рецепта-повод за вдъхновение.





 Хората се унищожават, мамят и давят в собствените си навици! Елементарното, човешкото е изтрило същността си. Живият не иска да създава, мъртвият не може да споделя.




 Моето мото е "никога не спирай да се развиваш". Не е толкова трудно да изграждаш личността си.
 Човекът е проект на висшото общество....
 Човекът е онази максима, която всички желаят, която бива раздирана от една фикс идея за несъвършенство.
 НИЕ сме творчество на изобилието, на необятното пространство, на неодволетворената човешка плът.



 Ежедневието ни затрупва и много малко са онези плодове на съдбата които успяват да се оттърват от пепелта.
 Животът е пъзел, а ние картонените парченца....всяко едно е отделна част от личността ни, всяко едно жарък поглед на невинно дете. Правим грешки, чести спънки....представете си едно дете(малко, нежно и невинно), а то просто пада. И следва плач, очите плуват в необятен океан, ръцете търсят топлотата, онази подкрепа....Но децата са деца, след минути им минава и отново се усмихват, и отнова се затичват в безмерните слова на родителите. Така децата се справят със своите ''проблеми'', нищо не може да застане на пътя им, нищо не ограничава възможностите им..... Нека бъдем деца, нека усетим безгрижието, онова блажено спокойствие съживяващо порочното и истинско щастие.




 Когато сте тъжни, когато енергията напуска тялото ви, не правете грешката да се свиете, не се затваряйте в негативното мислене....! Погледнете нещата от другата страна, разтворете дланите, раздвижете пръстите, изправете се и погледнете нагоре към бездънното небе. Усещате ли връщащата се положителана енергия, докото зрението все още се бори със светлината. Да..това е силата!Понякога трудно, друг път детинско, но никога невъзможно, защото колкото и сложна машина да е човека, той има чувства. Ние мислим и творим, играем си с природата....
